I start off with one of my favorite recipes – the Garlic Lemon Spanish chicken recipe!

In most countries, chicken is relatively affordable for most people. Since it is a white meat, it is much healthier than other types of meat and it is very easy-to-make as you can easily pull off the skin before cutting it or cooking it, making it fat-free. This recipe contains two main ingredients that Spain is famous all over the world for, namely garlic, which is anti-oxidant and lemon, which is rich in vitamin C. Do not include the white pith in the recipe as it is very bitter. The lemon gives that tangy zest to the recipe and the saffron that is also present in the dish imparts that special yellow color and that beautiful aroma, making this dish absolutely mouth watering!

Pollo al Ajo: Easy Spanish Recipe for Garlic Lemon Chicken

Ingredients:
  • 1 finely chopped chicken.
  • Half a clove of peeled and crushed (with salt) garlic.
  • 1 cup of water.
  • Juice of I lemon, zest as well.
  • 3 crumbled strands of saffron.
  • Olive oil.
  • Seasoning.
Procedure:
  • Heat the oil in a small pan.
  • Add the chopped chicken pieces and sauté until they turn golden brown.
  • Season the mixture and place in a large casserole bowl.
  • Sauté the crushed garlic.
  • In water, stir the saffron and zest of lemon.
  • Bring this mixture to a boil and let it simmer for about 3 minutes.
  • Remove the mixture from the heat and then pour in the lemon juice.
  • Pour the mixture over the chicken.
  • Bake the dish at about 170 degrees C until the chicken becomes tender.
Spanish Tapas: Easy Spanish Recipe for Low-Calorie Garlic Prawns

Garlic prawns is a very popular Spanish Tapas seafood recipe and is known by Spaniards all over the world as gambas al ajillo. This recipe is ideal if you are cooking at home.Prawns are low-calorie seafood items and they don’t take a long time to cook. Sip on a glass of wine while preparing this exotically delicious dish.

Ingredients:
  • 400 grams of shelled prawns.
  • 6 cloves of peeled and sliced garlic.
  • 1 finely chopped red-hot chili pepper.
  • Seasoning.
  • Olive oil.
  • 1 quartered lemon.
  • 1 tablespoon of freshly chopped parsley.
Procedure:
  • Heat a little of the olive oil in a pan and then add the garlic slices.
  • When the garlic starts to color slightly, then add the chili pepper.
  • Cook this mixture for about 2 minutes and then increase the flame.
  • Add the prawns in the mixture and sauté them for about 1 to 2 minutes for each side.
  • Season the mixture and then sprinkle it with the chopped parsley.
  • Serve the dish along with lemon wedges.
Arroz al Horno: Baked Spanish rice

Ingredients:
  • 4 cups of rice.
  • 8 cups of stock.
  • 200 grams of pork, cut into tiny chunks.
  • 1-cup of pre-cooked chickpeas.
  • 1 thinly sliced potato.
  • 2 skinned and chopped ripe tomatoes.
  • 2 chorizo sausages.
  • 1 clove of garlic.
  • 3 crumbled saffron strands.
  • Salt.
  • Olive oil.
Procedure:
  • Heat the oil in a small pan and sauté the pork chunks.
  • Add the potato slices and heat until they turn brown.
  • Introduce the tomatoes and chickpeas.
  • Lower the heat and cook the mixture gently for about 5 minutes.
  • Add the chorizo sausages and the rice and stir gently.
  • Pour in the crumbled saffron and the stock.
  • Bring the mixture to a boil.
  • Place the mixture in a casserole dish and put the garlic head on top.
  • Cook in an oven for about 45 minutes or so.
  • Remove the garlic head before you serve.
